Usiri Menthikaya


Ingredients:

Amla - 8
cumin & mustard seeds - 1 1/2 tsps
oil - -3/4th cup
chilli powder - 2 1/2 tsps
salt - as required
fenugreek seeds - 1/4th tsp

Directions:

In a pan heat oil then add fenugreek seeds.Cool them and grind them.
In pan add 2-3 spoons of oil ,put amla and let then boil and turn soft on a medium flame.
Then add salt,chilli powder,fenugreek powder to  boiled amla and mix well and keep aside.
In another pan pour rest of oil,add cumin & mustard seeds.Once they splutter,add these amla in to pan.

Methi Cucumber


Ingredients:

Methi - 3 bunches
Onion - 1
Cucumber - 1
Row coconut paste - 1 cup
Chilli powder - 1 tsp
Salt -  As required
Green Chilli - 2
Oil - 2 tsps
Cumin seeds & mustard seeds - 1/2 tsp each
Turmeric powder - A pinch


Directions:

In a pan heat oil and fry mustard and cumin seeds,add onions,green chillies.

Once they fry add methi.When it is cooked completely add cucumber pieces,turmeric powder,salt  as to taste.

When the entire mixture is cooked well add raw coconut paste to it.Turn off the stove and ready to serve.:)

Cucumber Cream


Ingredients:

Cucumber - 1

Onion - 1
Cream - 1/4th cup
Salt - As required
Turmeric powder - A pinch
Chilli powder - 1 tsp
Red chilli - 2
Cumin seeds&mustard seeds - 1/2 tsp each
Oil - 2 tsps

Directions:

In a pan heat oil and fry cumin seeds & mustard seeds,red chilli.
When they splutter put onions and fry.
Add cucumber pieces and turmeric,also keep the lid so that they cook well.
When these pieces get boiled well mix salt and chilli powder.
After 2 min add cream,leave for 2 mins and turn off the stove.:)

Pepper Corn Fried Rice

Ingredients:

Rice - 1 cup
Pepper powder - 2 tsps
Corn seeds - 1/2 cup
Ghee - 2 tsps
Aji-na-moto - A pinch
Salt - As required
Soya sauce - 1/2 tsp
cumin seeds - 1 tsp

Directions:

Cook rice and keep aside.
In a pan heat Ghee then add cumin seed.Once they splutter add corn,pepper powder,aji-na-moto,salt,soya sauce and fry for 3 min.
then cooked rice is transfered into pan and fried for 2 min along with above mixture.

Jujube Rice

Ingredients:

Rice - 2 cups
Jujube(regi pallu) - 4 cups
Red chilli - 5
Curry leaf - 2
Green chilli - 3
Turmeric powder - 1/4th tsp
Coconut powder - 1 tsp
Salt - As required
Mustard seeds - 1 1/2 tsps
Black gram & Bengal gram dal - 2 tsps each
Oil - 1/4th cup
Tamarind juice - As required
Hing - As required

Directions:

Rice is to be cooked by adding required amount of salt and turmeric powder.Transfer the cooked rice into a wide bowl and let it cool.
In a pan heat oil and add hing,mustard seeds,black gram,red chilli,gram dal and fry them.Also add slitted green chilli and curry leaves.
Then add jujube and tamarind juice to the above and reduce the flame.Once the jujube is fried add coconut powder.fry for 2 mins and turn off the stove.
The mixture made above is added to cooked rice and mixed well.:)




 

Jujube patoli

Ingredients:

Seeds removed and mild ground jujube(regi pandu) - 2 cups
Toor dal - 1 1/2 cups
Mustard seeds - 2 tsp
Bengal gram dal,Black gram - 5 tsps each
Curry leaves - 2
Salt - As required
Oil - 1 cup
Red chilli - 6
Green Chilli - 6
Coconut Powder - 2 tsps

Directions:

Soak Bengal gram dal for 4 hours before cooking.Drain water and keep dal aside.Dry them well and grind them to in the paste form.
In a pan pour 1/4th cup oil,heat it and add mustard seeds,gram dal,black gram,red chilli and fry.Once they splutter add slitted green chilli,curry leaf and fry them too.Then add jujube paste in to the pan.
Then add required amount of salt,coconut powder.Mix well and add gram dal paste.
Reduce the flame,keep mixing in the pan by adding oil now and then.
When it is cooked we get a nice smell,then turn off the stove.:)

Tamarind Rice

Ingredients:

Sona masoori rice - 6 cups(uncooked)
Tamarind - 100 grms
Water - 1 cup to soak tamarind
Green chillies - 12(slit)
Curry leaves - 5
Red chillies - 5
Mustard Seeds - 2 tsp
Turmeric - 1 tsp
sugar - 1 tsp
Ground nuts - 1/2 cup(roasted)
Bengal gram - 1/2 tsp
Black gram - 1/4 tsp
Cashews - 1/8th cup
Oil - 1 1/2 cups
Cumin seeds - 1 tsp

Directions:

Soak Bengal gram in water for 30 mins.
Mix the soaked dal with washed and drained rice.
Pressure cook it with 12 cups of water.
Rinse the tamarind and soak it in 1 cup of water for 30 min.
Extract the pulp f it and keep aside.
Heat oil in a pan.Add bengal gram,black gram and 1 tsp of mustard seeds.
Once they splutter add roasted ground nuts,cashews and saute for a while.
Add cumin seeds,green chillies,red chillies and curry leaves and saute for a while.
Add tamarind pulp and saute for another 2 mins.
Cover and cook for 8 mins on medium flame until the oil separates.
Add sugar salt,turmeric and turn off the stove.
Grind 1 tsp of mustard seeds and 1 red chilli and put aside.
Mix the pressure cook rice-dal mixture with the sauteed masala.
Add the ground mixture to the above and mix well.

 

Bagara Rice

Ingredients:

Rice - 2 cups
Onions - 2 nos(cut straight)
Green Chilli - 3 nos(slit)
Mint leaves - 1 small cup
Bay Leaves - 3 nos
Cloves - 4 nos
cinnamon - 2 small sticks
Curd - 1/2 cup
Salt -  as required
Ghee - As required

Directions:

Heat ghee in a pressure pan.
Add bay leaves,cloves,cinnamon and mint leaves.
Fry for a while.
Add onions and green chillies and saute.
Add curd and salt.
Add the rice along with 1 1/2 cups of water.
Close the lid and cook up to 2-3 whistles.

Mixed Veg Coconut Curry

Ingredients:

Carrot:2
Capsicum:1
potato:2
Cali-flower:1 cup
Beans:12
Peas:1/2 cup
Thick Coconut Milk:1/2 cup
Dilute coconut milk:1/2 cup
Tamarind paste: 2 tsp
Black Gram:1 tsp
Salt : To taste
Oil:3 tsp
Raw Coconut powder:3/4 cup
Garlic cloves:10
Red Chilli:4
coriander seeds:1 tsp
Cumin seeds:1tsp
Mustard seeds:1 tsp
Curry leaf:2
Pumpkin:Small piece

Directions:

Cut potatoes,carrot,beans,pumpkin,Cali-flower into pieces.
In a kadai heat oil and add red chilli,cumin seeds,coriander seeds,garlic cloves,raw coconut powder.fry them well and grind them to from a paste.
Again in kadai boil all the vegetables and peas in dilute coconut milk.Add turmeric and salt.
Then add tamarind paste and boil well.Add masala powder and cook it for another 10 minutes.
In another kadai add oil and fry black gram,mustard seeds,red chilli,curry leaf.Then the coconut milk with vegetables is transfer into this and cooked until the vegetable pieces turn soft.

Vegetable Kurma

Ingredients:

Carrot:1
Capsicum:1
potato:1
Cali-flower:1 cup
Beans:10
Peas:1/2 cup
Onion:2
Tomato:2
Curry Leaf:1
Cilantro:1/4 cup(chopped)
Garam Masala:1 tsp
Salt : To taste
Oil:2 tsp
To make masala paste:
Coconut powder:1/2 cup
Garlic cloves:12
Ginger:little
Red Chilli:6
coriander seeds:2 tsp
Cumin seeds:1tsp
Poppy seeds:2 tsp

Directions:

All the ingredients taken for masala paste is to be fried and once cooled down ground well to make masala paste.
All the vegetables mentioned are cut into pieces.They should be semi boiled by adding salt in required amount of water.Later water should be removed completely.
Onions should be finely chopped.Tomato paste is made from tomatoes.
In a kadai add oil.Once oil is heat add onion pieces and fried until they turn golden brown in color.Then masala paste is to be added and fried.Now all the semi boiled vegetable pieces are added along with tomato paste.Mix them well.Then pour 2 cups of water and allow it to boil on light flame.Before turning off the stove garam masala is added.:)

Paneer-Coconut Gravy

Ingredients:

Paneer:200 grms
Thick Coconut Milk:1 cup
Dilute Coconut Milk: 1/2 cup
Green Chilli:5
Chilli Powder:One and half tsp
Coriander Powder:1 tsp
Cumin powder:1/2 tsp
Garam Masala:1 tsp
Chopped Cilantro:2 tsp
Curry Leaf:1
Onion:2
Tomatoes:5
Ginger-Garlic Paste:1 tsp
Mustard Seeds(aavalu): 1/2 tsp
cumin seeds:1/2 tsp
Oil: One and half tsp
Turmeric Powder:1 tsp
Salt:To taste

Directions:

In a pan heat oil and add mustard seeds and cumin seeds.Later add curry leaf,chopped onion,ginger-garlic paste,tomato pieces in the pan and fry for 3 minutes.Now in the pan mix with salt,chilli powder,turmeric powder,cumin powder,coriander powder,garam masala.Then drop paneer pieces in pan and allow it to cook for 10 minutes.Now dilute coconut milk is added in the pan and cooked until the gravy is formed slight thick.Now thick coconut milk is added and on light flame it should be cooked for 13 min.Then add cilantro on the top and can be served.:)

Corn Pakoda

Ingredients:

Cumin Seeds:1 tsp
Turmeric Powder:1/4tsp
Baking soda:1 pinch
Baby Corn:1/4kg
Green Chilli pepper:1 medium
Ginger:1 tsp
Chopped Onion:1 tsp
Finely Chopped Cilantro:1 tsp
Corn flour:1 tsp
Maize:1 cup
Frozen,tawed rice flour: 3 tsp

Directions:

In a mixer grind together tawed corns,green chillies,ginger and cumin seeds coarsely.
Add this paste into a bowl and add corn flour and rice flour and mix well.
Add salt,baking soda,turmeric powder and finely chopped cilantro and mix well.
Now heat up oil in a kadai for deep fry and drop small pakodas with a spoon into oil.
Fry it until they turn golden brown in color.
Ready to serve hot with ketchup.:)

Methi Masala

Ingredients:

Green Gram:1/2 cup
Potato:1
Ghee:1 tsp
Turmeric:1/2 tspChilli Powder:1 tsp
Chopped Ginger:1 tsp
Garam Masala:1/2 tsp
Finely Chopped Methi:1/2 cup
Tomato paste:1 cup
Salt:To taste

Directions:

Soaked green gram should be ground by adding salt.It should be fried by making small balls in oil.
Potato is to be peeled and cut into small pieces.
In a pan add ghee.The above made balls are fried along with cumin seeds.
Add chopped methi,diced potato,turmeric,chilli powder,chopped ginger,garam masala and mix well in the pan.
Pour required amount of water and let it cook completely.At last add tomato paste and mix it for 2-3 minutes.Spicy methi masala is ready.:)

Egg Fried Rice

Cilantro(finely chopped):To taste
Cooked plain rice: 3 cups
Ginger-Garlic Paste:2 spoons
Green chilli:4
Eggs:4
Oil:3 spoons
Onions:2
Pepper Powder:2 spoons

Directions:

Take a pan add oil and when it heats up add onions,green chillies and fry until it turns golden brown in color.
Add Ginger-Garlic paste and fry for 2 minutes.
Break the eggs into it and mix well.Allow it to cook.
Once the eggs are done scramble them,add cooked rice,salt,pepper powder and mix well.
Fry for 4-5 min.
It can be served hot by garnishing with cilantro.:)

 

Cheese Balls

Ingredients:

Cheese:200 grms
Butter:50 grms
All Purpose flour:1 cup
Baking Soda:A little
Eggs:2
Oil:Required amount to fry
Salt: To taste
Green Chilli:4

Directions:

Beat the eggs well in a bowl.Now place a bowl on stove and allow butter to melt.Add all purpose flour and fry in for few minutes.Now add the smashed cheese and keep the bowl aside.Once it get cooled add finely chopped chilli,salt,baking soda,beaten eggs to this and make it as dough.Leave it as such for an hour.Then make small balls out of this and fry them in oil till they turn golden brown color.Tasty cheese balls are ready to serve.:)

Paneer patty

Ingredients:

Paneer: 1/2 kg

Bread Slices:2

Tomato: 2

Garlic Paste: 1 spoon

Garlic cloves:5

Salt : To Taste

Procedure:

Bread should to smashed completely and the powder is taken in a bowl.Add garlic paste,paneer and required amount of salt to bread powder and make it as a paste.Make 6 patties from this paste.Then put it on the grill and fry it for 2-3 minutes.

In another bowl peeled off tomato pieces,garlic pieces and salt is to be mixed and put on stove.Allow it for sometime to cook so that the tomatoes would be completely boiled.Now garnish this gravy on the fried patties.Ready to serve.To add more taste serve it with hot rice and veggies:)

Pongal

Rice:1 cup

Green Gram(pesara pappu) : 1/4th cup

Cumin seeds(jeelakara): 1 spoon

Black Pepper: 1 spoon

Ghee: 1/4th cup

curry leaves : 2

Cashew : 15

Water : 6 cups

Salt : To taste

Procedure:

Mix rice and green gram.clean it well with water.

In a pressure cooker put ghee.When it turns hot add pepper,cumin seeds,curry leaves,cashew.Fry it till cashew turn little brown.

Now add the cleaned rice and green gram,stir it for 5 min in cooker .Add water and then required amount of salt.Allow it to cook.It tastes good when served hot.:)

 

 

 

Cocktail Drink

Ingredients:

Pineapple Juice: 2 cups

Papaya: 1/2 kg

Banana:1

Coconut Water: 2 spoons

Procedure:

Grind all the above mentioned in a mixer.Put in refrigerator and can be served by adding ice-cubes.:)

 

Mango Mix

Ingredients:

Raw Mango:1

Sugar : 1 cup

Cardamom Powder: 1/4th cup

Salt : to taste

Procedure:

1. Clean the mango well.Now boil this mango in a pressure cooker until you  get 2 whistles.

2. Once the mango is cooled its skin must be peeled off.The seed should also be taken off.

3. Grind the mango well and add sugar to it in a mixer.

4. Now juice is to be extracted from the above mixture and pulp is thrown away.

4. Add Cardamom power and keep in refrigerator.It can be served by adding ice water or cubes to 1/4th glass of above blended juice.:)

Snow Balls

Ingredients:
Milk:1/2 litre

Custard Powder:2 spoons

Sugar:6 spoons

Bread Slices:10

Pieces of almond & cashew:1/4th cup

Cherries:10

Mixed Fruit Jam:1/4th cup

Procedure:

Initially boil milk.Add custard to milk by stirring it well.Maintain low flame and keep stirring it till the milk is completely boiled.Then add sugar.Once the sugar is melted let it cool down.Put in the freezer for about 2 hours.Remove the brown portion and apply jam to all bread slices.Then sprinkle a little amount of milk on these slices.Then scatter the pieces of almond and cashew on these slices.Now make this slice in the form of a ball.Add them to already prepared custard,garnish with dry fruits and cherries.The yummy snow balls are ready to serve.:)

Sweet Lassi

Ingredients:

Yogurt/Curd: 1 cup

Sugar:one and half spoons

Rose Water:1 table spoon

ice-cold water:2 cups

Mint Leaves:4

Cardamom Powder:1/4th a spoon

Procedure:

Grind yogurt,sugar,rose water,cardamom powder in a mixer along with ice-cold water well.Then serve it in a glass by garnishing with mint leaves.:)

Strawberry Lassi

Ingredients:

Strawberry pieces:3 cups

Sugar:1 cup

Salt:To Taste

Ice Cubes:1 cup

Cardamom Powder:1/4th a Spoon

Yogurt/Curd:2 cups

Procedure:

Mix strawberry,sugar,cardamom powder and grind it soft in a mixer.Then add yogurt to the mixture and shake it well.Add required amount of salt for the taste.serve it by adding ice cubes.:)
